This cocktail uses last seasons spiced pickled cherries and in season blood oranges that pair beautifully together. It is a gorgeous ruby colour and quite an effervescent fizz from the prosecco with real legs from the cherry brandy. The cherries were pickled with orange, sherry soaked vanilla bean, cinnamon, allspice, cloves and pepper. Thank you to Pat for the help pouring the prosecco.
Spiced pickled cherry and blood orange prosecco cocktail

- 2 blood oranges: cut 3 slices from one of the oranges and reserve for garnishing the drinks, juice the remainder
- 1 ½ shots cherry brandy
- 1 handful ice cubes
- Prosecco
- Cherry pickles: 3 or more for garnish and 2 dessert spoons of brine
Instructions
Add juice, brandy, ice and brine to a cocktail shaker and shake until well combined and very cold
Place the cherry pickles one in the bottom of each champagne flute
Pour the brandy and juice and brine mixture into the glasses on top of the cherries
Top with prosecco: do this slowly or the mixture will overflow
Garnish with blood orange slices and more pickled cherries if desired
Enjoy as an aperitif

I used Maraska premium cherry liqueur and Sorriso King Valley prosecco sourced from Vintage Cellars.
