This is my twist on the classic old fashioned cocktail with spiced pickled cherries, blood orange peel, pink pepper and the smokiness of Laphroaig Scotch whisky. The intense smokiness of the whisky is enhanced by the pink pepper and pickled cherry brine. The cherries are from last season pickled with orange, allspice, cloves, pepper, sherry soaked vanilla bean and cinnamon.

- 1 shot Laphroaig Islay Single Malt Scotch Whisky
- 1 pickled cherry
- 1 strip blood orange peel
- 1 sugar cube
- Dash Angostura bitters
- 2 teaspoons pickled cherry brine
- ½ teaspoon pink pepper
Instructions
Take a whisky glass and add the pickled cherry to the base of the glass on a drink pick along with the pink pepper
Carefully peel a section of blood orange taking care not to bend the peel
Gently bend and snap the blood orange peel inside the glass and wipe the peel around the rim to release the oils from the orange
Soak the sugar cube in the cherry pickle brine and a dash of Angostura bitters
Add the soaked sugar cube to the base of the glass along with any remaining pickle brine
Pour the whisky over the garnishes and enjoy
