Ginger cookies are a warming and delicious healthy snack made with almonds, coconut oil, egg, honey and spices. They are gluten free and easy to make. When you hold them up to the light the ginger makes little glowing windows. The beautiful scalloped textured sides of these cookies were made by my Grandfather’s old fashioned cookie cutter.

- 2 ½ cups almond meal
- ½ cup naked ginger chopped
- Pinch salt
- 2 tablespoons coconut oil melted and cooled
- 2 tablespoons raw organic honey
- 1 real free range egg
- Seeds scraped from one vanilla bean
- 1 teaspoon nutmeg ground
- 1 teaspoon cinnamon ground
- 2 teaspoons ginger ground
Instructions
Preheat oven to 175 C
Add all dry ingredients to a bowl and combine
Melt the coconut oil and allow to cool, add to a small bowl along with the egg, honey and vanilla seeds
Whisk with a fork until well combined and glossy
Mix the wet ingredients into the dry to form a dough
Turn out the dough onto a sheet of baking paper
Place another piece on top and use a rolling pin to roll the cookies out evenly
Reserve the top piece of baking paper to line the cookie sheet as well as the bottom layer when finished rolling out
After removing the first layer simply fold the initial layer in half to continue rolling with the now halved dough
Use a cookie cutter to cut out round shapes and place on baking paper lined cookie sheets
Bake in the oven until golden or for about 12-15 minutes
