I love the flavour of cardamom and apricots together – this granola combines them as well as seeds, nuts and coconut for a healthy and filling breakfast.

Ingredients

  • 2 ½ cups rolled oats
  • 250gms coconut flakes, no preservatives
  • 4 cups almonds, chopped
  • 125gms dried apricots, no preservatives
  • 125gms cacao nibs
  • 125gms pumpkin seeds
  • 125gms sesame seeds
  • 125gms chia seeds
  • 1/3 cup coconut oil
  • 1 orange, finely zested and juiced
  • ½ teaspoon nutmeg
  • 1 teaspoon cardamom
  • 2 tablespoons cinnamon
  • 1 tablespoon ground ginger
  • 1 vanilla pod
  • ¼ cup maple syrup

Preheat oven to 150 C

Line large baking tray with baking paper

Chop nuts and apricots

Add all dry ingredients to large bowl and mix

In a small saucepan combine the coconut oil, maple syrup, orange juice and zest, scraped vanilla bean and pod – gently heat

Mix the wet and dry ingredients – use your hands to really mix everything together

Bake for 45-50 minutes at 150C

Serve with yoghurt or compote
