I love the flavour of cardamom and apricots together – this granola combines them as well as seeds, nuts and coconut for a healthy and filling breakfast.
Preheat oven to 150 C Line large baking tray with baking paper Chop nuts and apricots Add all dry ingredients to large bowl and mix In a small saucepan combine the coconut oil, maple syrup, orange juice and zest, scraped vanilla bean and pod – gently heat Mix the wet and dry ingredients – use your hands to really mix everything together Bake for 45-50 minutes at 150C Serve with yoghurt or compoteApricot cardamom granola
