Avocado toasts are one of the best and simplest ways to enjoy in season avocados for breakfast or brunch. They are especially good when paired with organic real free range hard boiled eggs and toasted black sesame seeds, and a cup of tea of course. I used super tasty and gorgeous avocados and real free range organic heirloom eggs from the @bigswingorganics certified organic avocado orchard in Mullumbimby. The texture and taste of these avocados is smooth, creamy and delicious and the colour is amazing. The big swing eggs are so beautiful and delicious hard or soft-boiled.
Avocado toasts with hard-boiled eggs

- 2 slices of bread
- Organic butter
- 1 organic avocado
- 1 organic real free range egg, hard-boiled
- Toasted organic black sesame seeds
- Pepper and salt to taste
- Tea to serve
Instructions
To hard-boil the egg take a small saucepan and fill with cold water
Add the egg and put on the lid
Heat over high heat until at a rolling boil
Boil - timing for just over 3 minutes
Remove egg from the water and allow to cool down
When cool remove the shell from the egg and cut into slices
Toast the bread and spread with butter
Halve the avocado, remove the seed carefully and cut into thin slices
Lay slices of avocado on the buttered bread
Place slices of boiled egg on top of the avocado
Garnish with toasted organic black sesame seeds, salt and pepper
Enjoy with a cup of tea
