Pickles | Heat treated vinegar preserved pickles are a means of preserving seasonal fruits and vegetables with vinegar that is flavoured with sugar, herbs, spices and other flavour paired ingredients such as citrus or chili. Pickling gets you in touch with the seasons and is a great way to practice seasonal eating and to preserve the best of the season for later months.
Heat treated pickles use sterlised jars and a hot water bath to cook the pickles allowing an extended shelf life. Heat treated pickles may be kept in a cool dark place for u to a year, depending on the produce and recipe used. The flavour of heat treated pickles intensifies and becomes more complex as they age.
